Chicken-Bone-Broth

Vietnamese Inspired Chicken Bone Broth

Ingredients

  • 1 organic chicken carcass
  • 6 organic chicken wings
  • 2 cloves of garlic
  • 1 onion
  • 1 tsp peppercorn
  • 1 tsp allspice
  • 2 cloves of star anise
  • 2 bay leaves
  • 2 tbls apple cider vinegar
  • Filtered water to fill the pot

Method

  1. Place all the ingredients into your pot
  2. Fill with filtered water until all the bones are covered.
  3. Bring the stock to a boil
  4. Reduce to the lowest setting and simmer for 6 – 8 hrs. (you could also pressure cook for 1 hr if you have the equipment)
  5. Let it cool and strain
  6. Refrigerate in a large bowl overnight and skim the top fat layer the next day.
  7. Use in soups, stews and as bases for any meal that requires water.
