Erewhon Chicken Noodle Soup

Whilst travelling through Los Angeles in March 2020 we visited one of my favourite supermarkets, Erewhon. It is one of the more exclusive supermarkets in LA and has the best chicken soup so I decided to reinvent it.

Ingredients

  • 1 fresh chicken (preferably organic or at least hormone free)
  • ½ onion chopped finely
  • 2 cloves of garlic
  • 2 carrots cubed
  • 1 knob of ginger chopped
  • 1 zucchini spiralized or sliced
  • 150 grams of pasta (either fresh made, spirals or even rice noodles, if wanting it carb free then add an extra zucchini)
  •  2 tbs of olive oil
  • Salt & pepper
  • Filtered water

Method

  1. In a large pot place the washed and cleaned chicken and cover with filtered water.
  2. Bring the chicken to a boil uncovered, skim the scum and then reduce to a simmer.
  3. After 45 mins rotate the chicken and simmer for a further 45mins
  4. Remove the chicken and put aside to cool. Once cool shred.
  5. Bring the stock back to the boil.
  6. Add in the carrots, onion, garlic & ginger, salt & pepper
  7. After 5 minutes add in the pasta and cook for a further 6 mins
  8. Turn the heat off and add in the shredded chicken & olive oil
  9. Serve and season
