Vietnamese Inspired Chicken Bone Broth
Ingredients
- 1 organic chicken carcass
- 6 organic chicken wings
- 2 cloves of garlic
- 1 onion
- 1 tsp peppercorn
- 1 tsp allspice
- 2 cloves of star anise
- 2 bay leaves
- 2 tbls apple cider vinegar
- Filtered water to fill the pot
Method
- Place all the ingredients into your pot
- Fill with filtered water until all the bones are covered.
- Bring the stock to a boil
- Reduce to the lowest setting and simmer for 6 – 8 hrs. (you could also pressure cook for 1 hr if you have the equipment)
- Let it cool and strain
- Refrigerate in a large bowl overnight and skim the top fat layer the next day.
- Use in soups, stews and as bases for any meal that requires water.
